Ceylon cinnamon – also known as "true cinnamon" – is produced from the inner bark of the evergreen tree Cinnamomum verum. The 5 cm long Ceylon cinnamon stick offers rich aroma and flavor to dishes. It is brittle and requires care when handling.

Uses of Ceylon cinnamon bark:

• In warm beverages with water, lemon, honey, and cinnamon.
• In green tea for added aroma.
• In mulled wine with spices.
• For decoration on fruit platters or syrupy sweets.

In traditional Greek cuisine, it is used to prepare sweets, as it combines excellently with cloves. The use of ground cinnamon in recipes is avoided to prevent clouding the syrup. It is also used in rice dishes, offering unique flavor.
