Mastic from Chios is the aromatic natural resin extracted from the mastic tree (Pistacia lentiscus). The mastic plant is an evergreen shrub that can grow up to three meters in height. It is mainly cultivated on the island of Chios, where the natural resin, or mastic, is harvested, being the most important product of the island.

Mastic is collected in a traditional manner, where workers make incisions on the trunk of the tree at specific points. The mastic begins to flow and stabilizes after approximately 15 days. This process takes place from mid-August to mid-September.
