Mastic from Chios is the aromatic natural resin extracted from the mastic tree (Pistacia lentiscus). The plant is an evergreen, bushy shrub that can reach up to three meters in height. It is found throughout the Mediterranean, with particular cultivation in Chios, where the natural resin, the island's most important product, is extracted. The collection of mastic traditionally begins on August 15th and is completed by mid-September.

Mastic is used in various fields, as it is utilized in pharmaceuticals for the production of microcapsules, in cooking for adding a distinct aroma to foods, ice creams, and cookies, as well as in distillation and perfumery for making beverages and cosmetics.
