The product has changed. It has nothing to do with what I was buying all of last year. It is darker than oak honey (photo) and has a heavy smell and taste. It may appeal to some, but I returned all the packages except for the one I opened. In any case, I leave this review so that old customers like me don't get fooled.

The crystallization of honey is a natural process that does not affect the nutritional value of the product and is not related to its quality.
All honeys will crystallize at some point, except for those from fir and pine trees.
Honey contains sugars. Thus, depending on the percentage of glucose and water, as well as the pollen or wax it contains and the temperature at which it is stored, the crystallization process begins. If the sugaring bothers you in terms of texture, you can easily restore it to a liquid form using the "double boiler" method. But it was disappointing. It was filtered and lighter in color than in the photo, and overall, the quality and taste were like the plain and cheaper honeys from big factories that you get at the supermarket or the ones in small packages they put in hotel buffets.
Just to be clear, it is edible, it's not bad or adulterated... it just doesn't deserve its price and it is definitely not pure/fresh.
