Petimezi is the thick product derived from the must of grapes after boiling, without prior fermentation. It has a rare deliciousness and a slightly roasted flavor.
It is used in desserts during baking and as a sweet topping for dishes, desserts, or salads. It is produced throughout Greece and can be made for home use or commercial distribution under various trade names.
There are light and dark syrups, depending on the type of grape used and the boiling method (in pots for dark or in a pan for light). Petimezi should not be confused with grape must, which is the juice produced from pressing grapes without boiling. Boiled must is also called cut must. Depending on the boiling time, petimezi is produced in various densities.
