Santoku Knife

The Santoku knife is the all-purpose knife that in Japanese means "three virtues", as it can be used for meat, fish, and vegetables.     Owner of this knife for about 1.5 years. It has endured 3 months of daily full-time work and 1.5 years of student apprenticeship. It performed exceptionally well at school (I sharpened it twice towards the end of my studies) but - from the second month onwards - almost daily. It cuts very quickly and easily. However, because the blade is not curved, it is not convenient for fast, fine chopping for several minutes, resulting in quick fatigue.
