The vinification of each variety takes place separately in stainless steel tanks under controlled temperature conditions of 16-17°C. The fermentations are interrupted by cooling the fermenting must, leaving residual sugars in the wine. Immediately after, the blend of the three witches is carried out, followed by post-fermentation actions with periodic suspension of lees for about 1 month, after which the processes for bottling preparation begin.

Description
The Three Witches from Baraffaka Estate is a wine with a bright rosé color and complexity on the nose with aromas of red fruits and floral notes. A semi-sweet, semi-sparkling rosé wine made from the varieties Agiorgitiko, Syrah, and Moschofilero.
Full-bodied in the mouth with pleasant acidity and a long finish. You can enjoy it as an aperitif, but it also pairs ideally with seafood, white meats, cheeses, and pasta. Serve at 8-10°C.
