FRENCH TARRAGON (TARRAGON LEAVES) or ARTEMISIA or DRACONTEION is a plant from the Composite family (Compositae) native to Eastern Europe. It is a perennial herbaceous shrub that grows to a height of 80 – 120 cm with edible green leaves and small yellow flowers in inflorescences. The leaves have a strong flavor and aroma, aromatic, woody, and slightly spicy, with a sweet note. The taste of tarragon enhances the aromas and flavors of dishes. In French cuisine, it is a key ingredient in Béarnaise sauce and pairs well with seafood, poultry, and offal.

Culinary Uses: It is widely used in gastronomy for its distinct aroma and unique sweet-bitter flavor. Caution: The dosage should be careful as excessive amounts can alter the outcome. It is preferred to be added towards the end of cooking.
