In terms of cleaning, I don't even use non-stick paper, I just add a little water, it swells and easily comes off afterwards, or even better, I clean it while it's still hot. I have bought a classic dish brush that doesn't scratch it and removes everything, and then I use the traditional sponge. For potatoes, I recommend marinating them first, they come out amazing, plain ones don't appeal to me, the taste is missing.
