Description
Fir Honey from Mainalo is produced from the black firs of Mount Mainalo in Arcadia as well as from Mount Parnonas in Arcadia and is a renowned product for its taste and low sugar concentration. It is light-colored and resembles something between caramel (pearl) and vanilla.
This honey is not collected from flowers but from a honeydew produced by some microorganisms on the trunk of the black fir. Another unique characteristic is that due to its low glucose content, it crystallizes very slowly or not at all.

Within about a month, I placed a new order. The color was lighter with highlights and a bit thicker in flow. Unfortunately, the taste was different. Quite a bit sweeter than the first time. And I chose it for exactly this characteristic, to be relatively less sweet, for a diabetic elderly person.With the first purchase, they were thrilled.

I always try the local honey with my family wherever we go in Greece and bring some back to Athens, to have a sweet memory of our trip.
I first tried this specific honey as a soldier in Tripoli, and since then I regularly get it with each new harvest.
It doesn't crystallize, it's not too sweet, just the right amount, and it will please even those who normally can't stand honey. The vibrant toffee-like color is unique and excites the kids.
