Black buckwheat (soba) and wheat noodles. They are served hot as noodle soup but also cold with a dipping sauce called soba tsuyu, which consists of dashi, sweet soy sauce, mirin, and other ingredients such as wasabi.

In modern fusion preparations, they can also be found in salads with chopped vegetables and sesame dressing (goma dare).
