The wood is not of good quality, also the metallic ones are better, especially those with holes. It requires a significant amount of flour to prevent the pizza from sticking, while at the same time, if there is even a little more flour left on top than necessary, it remains on the bottom of the pizza and burns, giving it a bitter taste. Check the opinion of professionals pizzaiolo like Vito Iacopelli. One solution is to use a mixture of fine semolina and flour to reduce this phenomenon, but whoever hasn't bought yet, it's better to spend a little extra for a metallic one and save the trouble.
