In this book, however, you will find some dairies and several efforts that have deviated from the beaten path and have something special. You will find all the great cheeses of Greece gathered, which we will examine in detail one by one, as well as cheeses with strange names and small production dairies. I made an effort to clarify things from place to place by recording as many cheeses as I could. It is likely that I have not found all the cheeses of Greece, but at least 100 cheeses have been added to the already existing record of my previous book. Probably after years, a new book by another researcher will be able to gather them all. For now, enjoy this journey from one end of Greece to the other by a person who loves cheese and very impartially records what he knows and what he can.
