The ripe tomatoes are left unwatered for 5-6 days, achieving fruits with high sugars, expressed in degrees brix. During harvest, only the fully red ripe tomatoes are collected and processed in less than 24 hours.
The sauce highlights traditional Greek cuisine, offering flavors you may have forgotten.

It is obvious that it is made from tomatoes that smell like tomatoes and taste like tomatoes :-)
From what I read on their page, they use ONLY TRADITIONAL varieties and not hybrids. VERY IMPORTANT and this.
