Cyclops Early Harvest Olive Oil

A single-varietal extra virgin olive oil, Cyclops, with very low acidity, made from the Makris variety, which has a unique personality thanks to the microclimate of the area and the soil structure of the estates from which it is harvested in mid-October.

It is characterized by a medium to high intensity fruitiness with a strong freshness of green olives and notes of green banana, artichoke, and freshly cut grass.

It is processed within 4-8 hours of collection under excellent conditions of oil extraction and cold pressing.

In taste, it is complex and delicate with a medium intensity bitterness and spiciness. It is recommended to be consumed raw as a finishing touch on all your dishes.
