Arborio is a white, short-grain rice, ideal for risotto. It is characterized by a pearly, round, and plump grain that has high absorbency and a firm, "sticky" texture, ideal for preparing a moist risotto. The higher amount of soluble starch released during cooking helps create a creamy texture.

Arborio requires 18 minutes of cooking and is ready when al dente.
