The knife santoku by Victorinox with a blade length of 17cm, is the Japanese version of the Chef's knife. It is slightly shorter, thinner, and has a flat blade. It is ideal for meat, especially for cutting bones, fish, and vegetables. It is less suitable for finely chopping herbs, but it is the best choice for thin slices of vegetables. It has a large blade and a surface that helps prevent food from sticking during cutting, while the curved tip aids in slicing. It is made of stainless steel, a popular material for knives, it is particularly durable and does not corrode. It is a combination of carbon and iron as a base, and chromium is added to repel stains and give the blade a glossy finish.

Very good and sharp, Victorinox quality. I would like it a bit heavier and more balanced, with a somewhat better handle in terms of feel. For its price, it remains top-notch.
Excellent cutting, just like in the larger Victorinox knife that I have. It cuts perfectly even after days of use. It sharpens very easily, even with a simple rod, without a stone, and it cuts almost like new again. I think it is one of the best solutions for anyone who wants to upgrade from the classic IKEA chef knife. I recommend it.
The only negative is that it is a bit soft. The tip has bent a little and it won't fix. It didn't fall, it's just how it is.
