Trahanopita with sour trachana Oikopal 6 rustic sheets for pie.
Instructions: In a pot, add the water, butter, salt, and milk and bring to a boil. Add the sour trachana, stirring continuously, and cook for 10-15 minutes. When the mixture cools, add the cheeses and 4 eggs, stirring continuously. Meanwhile, grease a baking dish and layer 3 sheets, brushing each with oil. Spread the mixture and cover with the remaining sheets. Beat one egg with oil and water, score the pie, and pour the egg mixture on top. Bake at 180°C for about 45 minutes.

I have tried many commercially-made trahana products several years ago. All of them are far from a homemade trahana.
This year, because we delayed the production of our own trahana, I ordered this one as a temporary solution.
I must say, I was surprised by its quality.
It is better, not only compared to the industrial ones, but also compared to many mediocre homemade ones. It has the right taste and aroma (although somewhat mild). It is sour enough and not overly so. It doesn't dissolve with just a few minutes of boiling like most others.
I haven't tried every trahana available, but I believe it belongs to the top ones in the market.
