Traditional Chios trahanas with flour, semolina, yogurt, onion, milk, and Chios sun-dried tomatoes. It contains trachana herb, which flavors and accelerates the fermentation process. It is usually consumed in soup form. In the Chios recipe, poached eggs and goat cheese are added.
