Vanilla Fir Honey is produced by the Souka family on the slopes of Mount Chelmos. This honey is not collected from flowers but from a honeydew (resin) produced by certain microorganisms on the trunk of the Black Fir.

It has a mild and sweet taste due to the low natural sugars with notes of caramel and a mild fir aroma. It is rich in trace elements (potassium, magnesium, phosphorus, iron, etc.). It contains vitamins in very small quantities, but even this small amount helps in better assimilation of sugars by the human body. The color varies depending on its region of origin. Thus, fir honey from Mainalo, Parnonas, and Chelmos stands out due to the cream highlights that form inside it and is called "Fir Vanilla." Generally, fir honey has a intense honey color, darker in some areas and lighter in others. Due to its low natural sugar content, it does not crystallize at all and is the only one with this property among other honey varieties.

Tasty honey, but in no way does it resemble fir tree vanilla honey (or pearl, as it is otherwise called). It does not have the same nuances and is clearly sweeter and more liquid.
In the photos, the large container is vanilla honey that I bought from a producer, and in the small photo is this one, Helmos. And we are talking about the same ambient temperature in both.
OK honey, but it's not the classic fir tree vanilla. It sweetens, it's sweeter than it should be, and it has the regular color of honey. Another honey from scrubs that I bought met all the specifications, as I tried it and bought it from local shops in Vytina.
I had bought this honey two more times, which was perfect.
The third time I bought it, it had no resemblance in appearance or taste to the previous ones, in fact, I bought two jars of 950gr each.
After I checked the label to see if it really said Fir Vanilla and to my surprise, I saw that it said Fir Vanilla and not blossom honey or something else.
The only logical explanation I can give is that there was a mix-up with the labels.
Something that is very serious because I paid extra for Fir Vanilla.
It did not have the caramel flavor that characterizes this particular variety, nor did it resemble genuine fir tree honey "vanilla" in texture. Fir tree honey theoretically does not crystallize, and if it does crystallize, it means that it is not 100% fir tree honey "vanilla". What I received was finely crystallized
This year I had the luck to taste some very delicious honeys. This was the best congratulations to the producers!
It is a thick honey that tastes like flower honey to me. The children said it reminds them of jam.
