The Santoku knife is a general-purpose knife, where in Japanese it means "three virtues", as it can be used to finely chop meat, fish, and vegetables. Its tip is more curved than that of a chef's knife, while the small length of its blade makes it ideal for finely chopping your food.
Its lightweight makes it comfortable for frequent use, while the indentations on its blade keep air so that food (especially fatty ones) does not stick to the blade when cutting.
